- Thin pear slice and a cinnamon stick, for garnish
For the spiced syrup: 1 cup water, 1 cup sugar, 2 cinnamon sticks, 4 whole cloves, and 4 thin coins of fresh ginger.
Instructions
- Make the syrup first. Bring the water, sugar, and spices to a gentle simmer in a small saucepan, stirring until the sugar dissolves. Simmer for 5 minutes, remove from the heat, and let it steep for 20 to 30 minutes. Strain into a jar and refrigerate; it keeps for about two weeks.
- Fill a shaker with ice. Add the pear juice, lemon juice, and 0.5 oz of the spiced syrup.
- Shake hard for about 15 seconds, until the tin is frosty.
- Strain into a highball or large wine glass over fresh ice.
- Top with 2 to 3 oz of sparkling water and give it one gentle stir to combine.
- Garnish with the pear slice and cinnamon stick, then taste. If your pear juice runs sweet, a small extra squeeze of lemon sharpens everything up.
Variations
The celebration version. Swap the sparkling water for a chilled non-alcoholic sparkling wine such as Lyre’s Classico Grande. The wine brings its own acidity, so you can drop the lemon to 0.5 oz. This is the version to pour when guests show up.
The ginger-forward version. Top with ginger ale instead of soda and cut the syrup back to 0.25 oz, since the ginger ale carries its own sweetness. The result is spicier and reads more like a fall punch.
The pitcher version. For a crowd, combine 3 cups pear juice, 0.75 cup lemon juice, and 0.5 cup spiced syrup in a pitcher and chill. Add ice and a full bottle of sparkling water just before serving, not sooner, or the bubbles will be gone by the second glass.
