Ginger Lime Mocktail

Ginger and lime is one of the great bar pairings, and you do not need vodka or a copper mug to enjoy it. This ginger lime mocktail borrows the backbone of a Moscow mule (spicy ginger, sharp lime, plenty of fizz) without pretending to be one. The difference is the syrup: instead of relying on whatever ginger beer happens to be on the shelf, you make a genuinely spicy ginger syrup at home, which puts the heat level entirely in your hands.

Fresh ginger does the heavy lifting here, and that is the point. Ingredients

Spicy Ginger Syrup (makes about 8 oz)

  • 8 oz water (1 cup)
  • 1 cup granulated sugar
  • 4 oz fresh ginger, thinly sliced (no need to peel)
  • 6 to 8 whole black peppercorns (optional, for extra bite)

For One Drink

  • 1 oz spicy ginger syrup
  • 0.75 oz fresh lime juice (about one juicy lime)
  • 4 oz chilled sparkling water
  • Lime wheel and a piece of candied ginger, for garnish

Instructions

  1. Make the syrup: combine the water, sugar, sliced ginger, and peppercorns (if using) in a small saucepan. Bring to a gentle simmer, stirring until the sugar dissolves, then cut the heat and cover.
  2. Let the syrup steep for at least 30 minutes; a full hour is better if you like real heat. Strain out the solids, bottle the syrup, and refrigerate. It keeps for about two weeks.
  3. Fill a highball glass (or yes, a copper mug) with ice.
  4. Add the ginger syrup and lime juice, then top with the chilled sparkling water.
  5. Give it one gentle stir to combine; a long-handled bar spoon reaches the bottom of the glass without knocking out the bubbles.
  6. Garnish with the lime wheel and candied ginger and serve immediately.

Variations

The shortcut: no time for syrup? Use 4 oz of a spicy craft ginger beer in place of the syrup and sparkling water, and bump the lime up to a full ounce. It is a slightly sweeter drink, and still a good one.

Extra heat: add two or three thin slices of jalapeno to the syrup while it steeps. The pepper flavor stays subtle, but the warmth builds noticeably.
